These pictures memorialize my first attempt at making chocolate. Tempering isn't as easy as it sounds and my chocolates "bloomed" a little bit (the cacao butter separated from the cacao a little bit) but they still tasted great. I bought these so I can make honey-sweetened chocolate rather than cane sugar because honey has a lot of healthful properties, including fighting inflammation, whereas sugar can cause or exacerbate inflammation. They are very easy to use, the chocolate snaps right out after it set. I also made "jelly" candy bars using agar agar which also worked very well, but they didn't taste nearly as good as chocolate.
